日本料理店研修始まる
終日雨。
２７通のメール受信。１７通のメール送信。
テレビ取材の詳細日程について文書化。
ボランティア貯金完了報告書作成。
８月１４日頃完成させたい。
午前９時、雨の中、ベトナム事務所へ。
ベトナム事務所で仕事。
午後２時半。日本料理店の料理研修。
「子どもの家」のニー、グエット、ターオの３人
に料理の基礎から教える。９月３日の開店を目指し、
包丁の使い方、野菜の切り方、魚のさばき方などを
教える。
今日は包丁の持ち方、包丁の使い方の基礎訓練。
キャベツ、なす、ニンジン、玉ネギ、レンコンなどの
きり方を３人の子どもたちに教える。
税田・松下・原・中村の皆さんが直接、手を取って
教える。

これから３週間ほどの間に出来るだけ多くの日本料理を
教えたいと思っている。既に研修日程プログラムは完成。
日本料理店の工事は着々と進んでいる。今日は、
東京平和産業の１階の廊下と部屋の壁を打ち抜き
広い日本料理店の室内が出来上がった。
壁の打ち抜きは大きなハンマーで「ガンガン」と
たたき、打ち抜いた。日本料理店の工事は全て
人力である。
今後は、カウンター、内装、玄関、厨房などを作り、
９月３日の開店を迎えるという日程である。
「子どもの家」の子どもたちの就職に受け皿としての
日本料理店は「子どもたちの自立」という
２００５年度、ＪＡＳＳ総会方針の具体化でもある。
